    It's Day 6 of Back to School Sandwich Week here on the blog and today I have another fun but simple and totally doable sandwich idea for you - easy homemade uncrustables pocket sandwiches!

    Every day this week I’m bringing you new quick and easy fun sandwich ideas for kids, all of which are perfect for popping in a bento box or packed lunch ready for back to school. If you're not packing lunches for your kids this year, you could also use all these fun ideas for teatime or lunches at home, or why not get your kids to give them a go themselves?

    Taking a few extra minutes to add a little fun to your child’s lunch box can make the chore of packing lunches a little more enjoyable for you and of course it will bring a smile to your child’s face when they open their lunch box at school!

    These simple pocket sandwiches are perfect for kids who don't like crusts on their sandwiches. They are quick and easy to make, and best of all you don't need any special equipment to make them - just a sharp knife and a fork!

    I used cream cheese and jam in one sandwich, and tuna mayo in the other, but you can easily adapt the fillings to suit your child's tastes. Other fillings that work well include houmous with roasted pepper, feta cheese, goats cheese or grated carrot, egg mayo, peanut butter and peanut butter with jam.     Homemade Uncrustables Pocket Sandwiches

    Ingredients: 

    • 2 pieces brown or white sliced bread
    • filling of your choice

    Method:

    Place one piece of bread on top of the other and carefully slice off the crusts (don't throw the crusts away, pop them in the freezer to turn into croutons or whizz up for bread crumbs later!).

    Open up the two pieces of bread, then spread your sandwich fillings over one of the pieces, leaving a border of at least 1cm of plain bread around the edge.

    Place the second piece of bread over your fillings to form a sandwich.

    With the tip of a fork, press all around the edges of the sandwich firmly to seal.

    Pack into an air-tight lunch box or serve.

    As well as the rectangle sandwiches I've shown above, you can also make round pocket sandwiches too.

    Make them as above, but use a round cookie cutter to cut the bread from the crusts before filling. Once you've sealed them with a fork, you can tidy them up by cutting the edges with the same cookie cutter before packing in a lunch box as before.
